Here are the classics among baking recipes – muffins. The vegan Kölln® Oat Muesli Fruit – no added sugar gives them a fruity note and a nutty oat flavour at the same time. These delicacies should not be missing from any recipe collection.

Ingredients

Ingredients for 12 muffins:
  • 200 g wholegrain spelt flour
  • 200 g Kölln® Oat Muesli Fruit – no added sugar
  • 2 level tsp. baking powder
  • a pinch of cinnamon
  • 1 apple
  • 1 banana
  • 350 ml plant-based milk
  • 50 ml vegetable oil
  • 2 tbsp. apple cider vinegar
  • 2 tsp. baking soda
  • 50 g dark chocolate coating (couverture)

Preparation

Put the wholegrain spelt flour, muesli, baking powder and cinnamon in a mixing bowl and mix with a whisk.
Core the apple and cut into small cubes. Peel the banana and mash it with a fork.
Add the banana, oat drink, oil and apple pieces to the dry ingredients in the mixing bowl and mix with the whisk.
Pour the vinegar into a small bowl. Add the baking soda, let it foam briefly and stir into the dough.
Line a 12-hole muffin tin with muffin liners and fill with dough. Bake on the middle rack in the preheated oven.
Let the muffins cool down. Melt the dark chocolate coating and decorate the muffins with it.

Top/bottom heat: 160 °C

Fan assisted oven: 140 °C

Baking time: approx. 20 minutes

Preparation time: approx. 25 minutes
