Spelt (dinkel wheat) belongs to the wheat family and is a close relative of today's common wheat. It is one of the oldest types of grain and is often referred to as an ancient grain. Unlike wheat, spelt is less demanding, more stable and more resistant to weather fluctuations. That's why it is particularly popular in the south of Germany.
But spelt has a little something extra: as a hulled grain, its kernel is surrounded by a firm husk. Before it can be turned into flour or flakes, this husk must first be removed – a bit like a natural protective shield.
