Preparation

1Put the flour in a bowl, mix in the yeast and sugar. Mix together with 500 ml of the lukewarm milk to form a smooth dough and let it rise, covered, in a warm place for about 30 minutes.

2Add Kölln oat bran flakes, salt and remaining milk, knead well and for a long time and let rise in a warm place for another 20-30 minutes. Form balls out of the dough and place them in a round, greased mold (ø 25 cm).

3Pour warm water into a drip pan, place the mold in it and let it rest, covered, for 20-30 minutes. Remove the mold, brush the rolls with milk and sprinkle with caraway seeds, poppy seeds, sesame and Echten Kölln Kernigen. Preheat oven. Place a bowl of water in the oven.

4Bake the rolls on the middle shelf. After 5 minutes of baking, take the bowl out again and finish baking the rolls. Top/bottom heat: 220°C Circulating air: 200°C Baking time: 25-30 minutes Preparation time: approx. 40 minutes (without waiting time)

5These rolls taste particularly delicious when fresh. A homemade herb curd goes well with this.
